Strawberry Spinach Salad with Basil Balsamic Dressing

Here's my ALL time favorite salad, a delicious and refreshing recipe for Strawberry Spinach Salad with the world's best basil balsamic dressing (IMHO)


Ingredients:

Fresh Strawberries
Fresh Strawberries

For the Salad:

6 cups fresh baby spinach or mixed greens

1 pint fresh strawberries, hulled and sliced

1/2 cup crumbled gorgonzola cheese (or feta or goat cheese)

1/4 cup chopped & toasted walnuts

1 avocado, sliced

Can add grilled steak, shrimp, or chicken, too




Garden fresh basil
Basil

For the Dressing:

1 cup balsamic vinegar

2 cups avocado oil or EVOO

1 teaspoon salt & pepper, more or less to taste

4+  tablespoons chopped fresh basil; I add more; I LOVE the basil in the dressing

(This makes a lot of dressing, which you can use as a marinade or slather on everything; it’s SO GOOD!)



Instructions:

Make the Dressing:

 In a blender, blend together the balsamic vinegar, avocado oil, salt, pepper, and basil until combined. Add more basil as needed. 


Prepare the Salad:

Combine the spinach/mixed greens, sliced strawberries, gorgonzola cheese, toasted walnuts, and sliced avocado in a large bowl.


Drizzle the dressing over the salad before serving and toss gently to combine. 


Serve immediately and enjoy!


Tips:

Toasting Walnuts: To toast walnuts place them in a dry skillet over medium heat. Shaking frequently until they are golden brown and fragrant. Be careful not to burn them.


Make Ahead: You can prepare the salad ingredients and the dressing separately in advance. Store the salad in the refrigerator and add the dressing just before serving to keep the spinach/greens fresh and crisp.


Variations: Feel free to add other ingredients, such as grilled chicken for protein, or substitute the feta cheese with blue cheese or another type you prefer.
